Blueberry French Toast casserole from

So… the first time I tried to make this recipe, I made the paleo bread, and never made it to making the casserole because I just ate the bread with almond butter on it!  (haha..I had got sick that day with a summer cold and never made it through the cooking process).

Either way, this recipe is delicious, and from a great site that I get a lot of recipes:

Blueberry French Toast Casserole
·       1 loaf Paleo Bread, cut into 1-inch cubes (I put the recipe below)
·       1 cup frozen blueberries
·       5 large eggs
·       1 cup coconut milk
·       ¼ cup honey
·       1 teaspoon cinnamon
·       1 tablespoon vanilla extract

1.    Place bread cubes and blueberries in an 8 x 8 inch baking dish
2.    In a medium bowl mix eggs, coconut milk, honey, cinnamon, and vanilla
3.   Pour egg mixture over bread and blueberries
4.   Bake at 350° on lower oven rack for 40-50 minutes
5.    Remove from oven and allow 15 minutes to set
6.    Serve
Serves 4-6

Paleo Bread
·       2 cups blanched almond flour
·       2 tablespoons coconut flour
·       ¼ cup golden flaxmeal
·       ¼ teaspoon celtic sea salt
·       ½ teaspoon baking soda
·       5 eggs
·       1 tablespoon coconut oil
·       1 tablespoon honey
·       1 tablespoon apple cider vinegar
1.    Place almond flour, coconut flour, flax, salt and baking soda in a food processor
2.    Pulse ingredients together
3.   Pulse in eggs, oil, honey and vinegar
4.   Pour batter into a greased 7.5 x 3.5 magic line loaf pan
5.    Bake at 350° for 30 minutes
6.    Cool and serve
